I told you guys about an order of desserts made by my cousin, right? This is the second variation to the desserts. It was originally a recipe from Tish Boyle, but I use the adapted version from Bisous à Toi. Do visit her blog, guys. She is a very talented Singaporean baker whom I adore veryyy much. for the cakes: (makes 35 medium-sized cupcakes)
11 tb unsalted butter, softened (156 g)
1 3/4 c cake flour (212 g)
1 tb baking powder
3/4 tsp fine salt
1 1/2 c sugar (300 g)
2/3 c cocoa powder (61 g)
2 large eggs, at room temperature (Grade A)
1 tsp vanilla essence (I used pure vanilla extract)
1 1/3 cups warm milk (320 ml)

Preheat the oven to 175 degree Celsius. Line the cupcakes holders and set them aside.
Beat the butter at medium speed until it’s very creamy — about a minute or so.
Add the sugar and mix it until it’s well blended (slightly fluffy, pale yellow colour) — about three minutes or so.
Add the cocoa powder and beat at medium speed — about one minute or so. The batter should look dark and smooth like melted chocolate. Add the eggs in, one at a time. Beat well after each egg. Add in vanilla extract. This will be the wet ingredient.
In a small bowl, sift together the flour, baking powder, and salt. This will be the dry ingredient.
Add 1/3 of the dry ingredient into the wet ingredient, mix it until it is combined. Add 1/2 of the milk and mix well. Add another 1/3 of the dry ingredient, followed by the rest of the milk and the final 1/3 of the dry ingredient.
Even though the mixture at this point will be nicely blended, take a spatula and scrape down the sides and bottom of the bowl, just to be sure all the flour, butter, and sugar has been well mix.
Pour and equal amount into each of the cupcake liners until half-full. I use a jug to make the process easier. Bake for about 25 minutes (different oven, different length of time), or until a toothpick inserted in the centre comes out clean.
Let cool. (Be patient!)

p.s. I just took a look at my IELTS result. Alhamdulillah, I got band 8.0. I need to brush up my academic writing though. Oh well that’s what research projects are for 😆
